Tonight I created a really fantastic Asian Soup out of the cook book The Essential Asian Cookbook put out by Bay Books called, Prawn and Noodle soup (page 85). It was so good that my 6 and 4 year old daughters ate it up with exclamations of how good it was! My best friend who lived in Japan for 3 years was very impressed as well =^~^= Unfortunately his 6yr old was not as impressed. She missed the soup’s considerable charm.
I adjusted the recipe a little based on the ingredients in the fridge that needed to be used. The addition of button mushrooms and substitution of baby bok choy for spinach only added to the overall savory goodness of this soup. The recipe called for 5 different garnishes that I’m sure would be wonderful additions to the soup but since I was running low on time I skipped them. Next time I make this soup I will be sure to leave myself enough prep time to get the garnishes ready in advance. After all bean sprouts, garlic chives, and crisp fried onions could only make ANY soup more tasty!
(went outside for a moment and came back in, the lingering soup smell in the house made me hungry again even though I’m TOTALLY stuffed!)
